Ingredients for Rajma Chawal

To recreate the magic of Rajma Chawal in your kitchen, you’ll need the following ingredients:

  • Rajma (Red Kidney Beans)
  • Basmati Rice
  • Onions
  • Tomatoes
  • Garlic
  • Ginger
  • Green Chilies
  • Spices (Cumin Seeds, Turmeric, Coriander Powder, Garam Masala, Red Chili Powder)
  • Oil or Ghee
  • Fresh Coriander Leaves (for garnish)
  • Salt to taste

Preparation Method

Soak the Rajma 

Rinse the rajma under running water and soak them overnight or for at least 8 hours. This helps in softening the beans and reducing the cooking time.

Pressure cook the Rajma 

In a pressure cooker, add the soaked rajma with fresh water, salt, and a pinch of turmeric. Cook until the rajma is tender and can be easily mashed between your fingers. Set aside.

Prepare the Gravy 

In a separate pan, heat oil or ghee and add cumin seeds. Once they splutter, add finely chopped onions, garlic, ginger, and green chilies. Sauté until golden brown.

Add the Usual Suspects (Masalas)  

Add chopped tomatoes to the pan and cook until they turn soft and mushy. Then, add turmeric, coriander powder, red chili powder, and garam masala. Cook the spices until the oil separates from the mixture.

Mix it up

Transfer the cooked rajma along with its water into the pan with the tomato-spice mixture. Allow it to simmer for a few minutes, allowing the flavors to meld together.

Cook the rice dum style

Rajma tastes splendid with the rich Basmati rice. Wash the Basmati rice, add 1.5 cups of water for 1 cup rice and throw in two bay leaves and cinnamon sticks and cook it in a heavy bottom vessel with a lid. Place a weight/any heavy object over it to seal the steam within and slow cook the rice.

Serve Hot

Once both the rajma and rice are ready, serve them hot on a plate. Garnish with freshly chopped coriander leaves for added freshness and flavor.
